Egg Curry
When I first started dating my hubby I thought egg curry was strange, but it actually tastes great, its easy to prepare and we always have eggs handy. The big dish is for mummy and daddy and the little one for baby! hers has no spice, just a little onion, garlic, one egg mashed, tomato little peas and spinach, got to get the veggies in !
Ingredients: 5 boiled eggs (they can also be poached in the curry), 1/2 onion, 3 green chilies, curry leaves, 3 cloves garlic, mustard seeds. masala powder, a little frozen coconut, salt, chili powder, green pepper, 2 big tomatoes
1. heat oil, pop mustard seeds, add curry leaves and green chili, and onion then saute
2. after a little while add masala powder and red chili powder and salt, than add green pepper this is optional, and diced tomatoes, then turn it down to a low heat and simmer for 20 min, near the add mix in the coconut
3. while this is cooking boil some eggs, peel and chop in half and then layer on the top of the curry, garnish with fresh Cilantro
Serve with chapatti or rice, we will eat it with rice and steamed broccoli

I hated eggs(as a result egg curry too) as a kid.Now I make a similar curry and I love it.Another variation is to add coconut milk to the gravy and I like the eggs poached in the curry-somehow,the curry always tastes better that way!

ReplyDeleteOh My! I wish I can have them right NOW with hot basmati rice. Your recipe is so perfect for Egg curry. I often make them by adding coconut milk - that gives rich flavour :)
