Italian Sausage with Vegetable's and Polenta
This was tonight's supper, very healthy and quick to prepare
Ingredients:
- 4 sweet pepper Italian sausages (Applegate farms- made from chicken)
- red pepper, yellow pepper
- 1/2 red onion
- Italian herbs
- fresh basil
- 4 cloves of garlic
- one pack of sun dried tomato polenta
- 1 big yellow squash
- 2 small eggplants
- 3 small carrots
- green beans
- 5 tomatoes
Method:
- heat olive oil and add the onions and garlic and saute for 2 min
- then add all of the veggies and sausage (this is pre cooked) and stir fry for 10 min
- add tomatoes cover with a lid and simmer for 20 minutes
- cook polenta, I mix mine with hot water to make like mashed potatoes its easy for Jasmine to eat, or you can slice the pre cooked one and fry.
I heard so much about polenta-but never tried it. I wish someone would just make it for me once-so that I know what to expect :)

I've never tried polenta, but my husband's family is from Sicily, and they rave about it. It was also prepared and fried on a vegetarian cooking show. I'll try this recipe, and look for sun-dried polenta today, which sounds delicious! Thanks :)

ReplyDeleteI was thinking how versatile, this could be. If one is missing a vegetable, it still would be delicious. If the desire is vegetable only, forget the sausage, although I bet the sausage gives it a lot of flavor.
