Cod in a Parsley and Cheese Sauce
I made cod today wild caught Alaskan, after writing for Alaskan Harvest Seafood I am only buying wild caught and sustainable fish, it has really made me think.
This was so so good:
Ingredients:
- 2 fillets of cod or desired number
- 1 cup of milk
- one tablespoon of butter
- 1 tablespoon of flour
- 1/2 a bunch of fresh parsley
- 2 slices of swiss cheese
- 1/2 bunch of spinach
- salt and pepper
- olive oil
Method:
- poach the cod in olive oil and salt and pepper with the spinach, turn to a low heat for 5 minutes.
- in a separate pan make a rouxe with the flour and butter then slowly add the milk, continuously stirring it so there are no lumps
- after a couple of minutes add the cheese and fresh chopped parsley stir until you get a nice thick and creamy sauce
- add to the cod and simmer for 2 minutes.
Roasted Red Potatoes
Ingredients:
- 10 small red potatoes chopped
- 5 cloves of garlic
- Italian herbs
- salt and pepper
- olive oil
Method:
- add the olive oil, potatoes, garlic and herbs and roast in the oven at 400 degrees for 45 minutes or until soft.
This was a lovely meal, quick to make and full of flavor, it is a very common way to cook fish in the UK, so for me it reminded me of home.

Looks delicious! Cheesy sauces with spinach are a weakness of mine...I'll have to make this roux!

This is a lovely dinner. Simple but tasty. Looks great and yummy. I am always looking for fish recipes. If it is not salmon, I like to hide the fish.
