Baba Ganoush
I had a huge eggplant to use so I went on google and decided to make Baba Ganoush. A popular spread/ dip from the Middle East.
I looked at the recipes and discovered I needed tahini I didn't have any so I quickly made this as well. Its a healthy snack high in potassium, manganese, vitamin C and fiber. It is pretty high in calories though with the olive oil, so its a great treat to share.
Roasting sesame seeds
Ingredients:
- 1/2 jar of sesame seeds
- olive oil
Method:
- roast sesame seeds in hot oven (400) for 5 - 10 minutes, be careful not to burn
- allow them to cool then grind with olive oil.
Baba Ganoush:
Ingredients:
- one large eggplant
- fresh parsley 1/2 cup or dried one tablespoon
- one teaspoon cumin powder
- salt to taste
- 4 cloves of garlic
- olive oil
- lemon juice
- tahini
Method:
- slice the eggplant and roast in the oven (350 degree's) for 25-30 minutes until it gets soft, then allow it to cool
- grind the eggplant with the garlic, lemon juice, parsley, cumin, salt and olive oil and tahini.
Oh how I love mediteranian food!!! I could eat this and hummus all day long.

Reminds me of "Baingan ka bharta"!! Not a big fan of eggplants(or brinjal as it's called in India).Hubby loves 'bhartha'-so I'm guessing that he'll like this too :)

I made Baba Ganoush for the first time this summer when I had eggplant in the garden. It was an instant hit, my kids are always asking for it.
