Easy Vegetable Pilaf
We came back from NYC on Sunday we had no food in the house, just 1/2 onion, curry leaves and some garlic in the fridge. So I got creative googled vegetable pilaf recipes and opted for frozen vegetables, it was fast tasty and healthy.
Ingredients:
- one stick of cinnamon
- 3 cloves
- cumin seeds
- 2 dried red chili's
- 3 cloves of chopped garlic
- 1/2 red onion chopped
- one spoon garam masala powder
- 3 bay leaves
- a few curry leaves
- spoon coriander powder
- teaspoon of turmeric
- one cup of basmati rice
- 2-3 cups of water
- salt to taste
- lots of frozen vegetables
Method:
- heat some canola oil and add all the spices with onions saute for 3 minutes
- add vegetables and saute another few minutes
- then add the rice and water, bring to a boil, turn down low and simmer for 20 minutes
