Allow me to introduce myself, my name is Skylar Griggs and I am a Registered Dietitian and self-proclaimed “foodie.” I wanted to share with you one of my favorite personal recipes. I hope you enjoy!

With summer quickly approaching, the perfect BBQ side dish is a must! This refreshingly cool summer salad will be a seasonal staple. The salad is quick, easy and can act as a side, or even a dip paired with tortilla chips (whole wheat of course)!
Sky’s Summer Salad
Ingredients:
- 16 oz of canned black beans, rinsed and drained
- 1 8 oz canned corn, rinsed and drained
- 1 cucumber, chopped
- 2 carrots, peeled and chopped
- 3 celery stalk, chopped
- 3 green peppers, chopped
- 1 onion, chopped
- 1/2 cup olive oil
- 1/2 cup white vinegar
- 2 tablespoon lemon juice
- 4 cloves garlic, crushed
- 1/2 tablespoon ground cumin
- 1/2 tablespoon ground black pepper
- 1/2 teaspoon chili powder
Directions:
- Prepare all ingredients
- Combine together in serving bowl
- Garnish with lemons
Prep/cook time: ~20 minutes
Serves: 8-12
