Chocolate Scotch Pancakes
I needed a little pick me up the other afternoon and didn't have the ingredients to make a cake, so I settled on dropped scones or Scotch Pancakes. They are basically little pancakes made with a thick and fluffy batter, great with afternoon tea!
Ingredients:
just enough to make about 4-5 small ones to share for portion control!
- 1-2 cups of self raising flour
- one egg
- about a cup of milk
- 2 tablespoon of sugar
- 2 tablespoon of cocoa
Method:
- mix all the ingredients together to get a nice thick batter
- heat a little canola oil then pour batter into pan cook for 1-2 minutes on each side
- I served them with maple syrup and strawberries - yummy

ReplyDeleteHa when you wrote you needed a pick-me-up I thought for a second that these actually had scotch in them. Which would have been weird, but amusing. They look awesome!

Wow, I have never heard of scotch pancakes, but these looks awesome. If I wanted something sweet and fast, I would probably just add PB to a choc rice cake like I usually do mid afternoon. I would also do some brownies or something.

I have strong opinions on tea. I had a sort of tea time when my children were younger. I fed them dinner when they walked in the door from school. They were famished and ate like wolves. Then, they had dessert with us when we ate later. It was a great system!
