Raspberry Tarts
I was in the mood for a sweet treat recently and made these easy raspberry tarts its a simple pastry shell filled with berry jam and topped with raspberry. I love making jam tarts as the fillings are endless last time I posted them I did lemon curd and clementines.

Raspberry Tarts:
Ingredients:
- 8oz flour
- 3-4 0z butter
- cold water
- a pinch of salt
- mixed berry jam or raspberry
- enough raspberries to top each tart
Method:
- mix the flour and the salt together then add butter and cut with a knife mix in cold water to make the pastry
- roll out then cut into round cut outs, I am not a baker he he and cup a mug!
- add to the bottom of a muffin baking pan then fill with jam and garnish with a raspberry
- bake for 15 min on 400 degrees

ReplyDeleteThese sound delicious...and I love the sound of the lemon curd/clementine filling, as well. I could pop several in my mouth easily! Hmmm...wonder if they'd be good w/ cherry/almond filling? Of course they would! ;)

Yum, I would do mine with banana and PB blended up or just plain ol apricot or fig jam.
ReplyDeleteI love the mini tarts, especially with the raspberry filling. In fact I think raspberry (possibly with some peach slices) might be my favorite.

Mmmm.. I would fill mine with fresh cream topped with fresh fruit, or a spoonful of Nutella (lol) or something with lemon. Mmmm... raspberry sounds good too :)

I love jam tarts! Standing in the kitchen making them with my mum when I was about 4 is a very early memory of mine. Yum!
