Easy Asian Noodles with Vegetables
Heres a lovely and super simple Thai inspired noodle dish, can be loaded with veggies and any desired meat and great for toddlers. Love these kind of meals when I am running low on groceries :-)
Ingredients:
- one cup of raw shrimp
- 1/2 a head of chopped broccoli
- 3 cloves of chopped garlic
- some minced ginger about a teaspoon
- 1/2 cup of mixed frozen vegetables
- 1/2 a chopped red onion
- 2 small chopped carrots
- 2-3 tablespoons of Pad Thai sauce
- 2 eggs
- one tablespoon of fish sauce
- one pack of chinese noodles
- a little chopped cilantro
Method:
- saute the onions, garlic and ginger in canola oil for 5 minutes
- then add all of the vegetables and shrimp for another 5 minutes on a high heat in a wok, scramble the eggs into the mixture
- add the sauces and cilantro stir fry till cooked (al dente)
- mean while boil the noodles for 5 minutes and combine
- its that easy ;-)
My friend and her little 16 month old (who loves my food by the way!) and Jasmine and I are headed to Asheville on Wednesday on a girlie trip to enjoy the fall colors and hope to meet the lovely Sommer from A Spicy Perspective!
