Mushroom and Ham Omelet
Recently I have been a tad nauseous all for a good reason (expecting baby number 2), but slowly feeling better :-), so I have had a few easy meals and not cooking quite as much. Heres a wonderfully simple and tasty meal. A simple mushroom and ham omelet with salad.
Ingredients:
- 3 eggs
- a little milk
- salt and pepper to taste
- a little butter
- about 10 mushrooms sliced
- 3 slices of ham diced
- a handful of mixed greens
- a few sliced cherry tomatoes
- oil and vinegar to drizzle over the salad
- a little feta cheese for the salad
Method:
- saute the mushrooms with butter until soft
- meanwhile mix eggs with milk salt and pepper, then add to the hot pan with the mushrooms
- turn pan to move eggs to edge to cook then leave on medium heat for a few minutes until cooked add chopped ham and fold over
- serve with a salad and bread and enjoy :-)
I always have fond memories of this omelet as my Dad makes great mushroom omelets :-)

ReplyDeleteoh are you pregnant again? congratulations! i'm a new reader so i'm still trying to get caught up. this is such a healthy, simple breakfast. hope your nausea doesn't stay for too long. i love vegetarian omelets with LOTS of cheese :-P

ReplyDeleteFunny, I made an omelet yesterday. I made a spinach omelet and then I diced avocado on it after I took it out of the pan, added a little hot sauce and I was so satisfied. I hope you feel better soon. In the mean time, if you can do eggs, you're ok.

Funny you should post and ask about favorite omelet. I am planning for omelets for dinner this week and it is my favorite which is a black bean chili omelet. I think that is the only time I go a little overboard on protein.

ReplyDeleteOooh! This looks sooo good. I love eggs no matter how they're cooked - except hard boiled. This looks delicious I'd happily have it for breakfast, lunch and dinner. Though I might replace the ham because I don't eat it :)

ReplyDeleteI have to tell you so you don't think I copied you- I ate something that looked just like this and took a picture for the blog- egg scramble with mushrooms, spinach, feta, topped with arugula and wheat crostini on the side. Too funny. Hope that nausea passes soon!
