Tarragon Salmon with Greek Roast Potatoes and............
Quite a while back I was tweeting with Michelle from Big Black Dogs about a salmon dish I had cooked, back then we decided to post our recipes on the same day and link to each other. The other day Michelle tweeted to me to do the same. We both made a simple salmon dish recently so here are another two wonderful ways to cook one of my favorite fish.
Ingredients:
- 2 Wild Alaskan Salmon Steaks
- about 1/4 cup of fresh tarragon
- sea salt to taste
- extra virgin olive oil
- about 10 small diced potatoes
- 2 tablespoons of Italian or Greek herbs
- 4 cloves of garlic chopped
- a few chopped cherry tomatoes
- a few sliced cucumbers
- balsamic vinegar and olive oil to drizzle over the top :-)
- a dash of oregano
Method:
- peel the potatoes and quarter them, sprinkle with Italian or Greek herbs and oregano, a little sea salt and drizzle with olive oil, add the garlic and bake at 350 for 30-45 minutes until soft in the middle and crispy on outside
- meanwhile marinate the salmon in fresh tarragon, olive oil, a little salt and then poach for 7-10 minutes sprinkle with lemon juice
- serve with a simple oil and vinegar salad and enjoy

"The Peppered Salmon is a super simple recipe which took all of about 10 minutes to prepare. As always I garnished my salmon with sliced green olives which is one of my favorite taste treats and I served it with Roasted Carrots, Potatoes and Radishes!

ReplyDeleteI love seeing these simple salmon preparations, and I think salmon can handle most anything! My easy salmon is Goya's Mojo Marinade...and my daughter would eat this since she was just a little tyke, so I never wanted to change it if she would keep requesting salmon, steamed broccoli and rice for dinner! Now she is more adventurous!
