Italian Seasoned Salmon with Salad and Cous Cous
I made this a little while before coming to the UK its super simple and full of flavor lovely for spring. I have had a fantastic week in Scotland with Mum and Dad now taking the train South to Lincolnshire tomorrow to stay at my Grandparents and also see hubby's family more :-) I do miss the bright sunshine of North Carolina a little though its been rainy of and on the last few days in Scotland. This dish is full of sunshine to me :-)
Ingredients:
- 2 pieces of wild Alaskan Salmon
- about a tablespoon of Italian herbs
- salt and pepper to taste
- good olive oil
- cous cous
- greens, a few cherry tomatoes and manderin oranges for the salad,
- a little balsamic vinegar and olive oil
Method:
- marinate the salmon in herbs and olive oil and let it sit for one hour in the fridge
- simply poach the salmon in a good pan for 5 minutes each side
- meanwhile cook the cous cous
- put the salad together and drizzle with oil and vinegar
- enjoy :-)
