Vegetables in a Bacon and Cheddar sauce over Penne
I adore pasta dishes and this one is one of my favorites, pretty easy to make and packed with flavor of course it has bacon in it :-) It also makes great leftovers for taking to work or the next day having a night off cooking, we all need that once in a while :-)
Ingredients:
- 2 packs of bacon, look for center cut a little leaner
- one red onion chopped
- one cup of frozen peas
- 4 cloves of garlic
- 1 1/2 cups of milk
- one tablespoon of corn flour or multi purpose
- one tablespoon of butter
- salt and pepper to taste
- penne or any desired pasta
- one pack of chopped mushrooms
- 1/2 a red bell pepper
- a handful of mixed frozen vegetables
- 2 thick slices of an aged seaside cheddar there's a wonderful British one at Whole Foods
Method:
- heat a little olive oil and saute the chopped bacon with onions and garlic for 5 minutes
- add bell pepper, vegetables and mushrooms
- continue to simmer on low heat for 10 minutes
- meanwhile cook the pasta until al dente and make a white sauce by heating the butter adding corn flour to make roux and slowly adding in the milk and cheese, stirring all the while
- mix sauce with bacon and vegetables and add with pasta
- enjoy

I too adore pasta dishes and have devised a wa to make them more enjoyable frequently . I add boiled some pearl barley to a pasta dish and you have to taste it to believe that the barley tastes great with pasta.

I most often go for a red sauce, but I have to admit that every now and then I crave a great white or cream sauce with my pasta. This is perfect! You can't go wrong with bacon and cheddar!
