Dominican Republic Red Beans and Rice
This recipe was inspired by a post by the lovely Nelly of Cooking with Books, its basically like her recipe but I didn't have celery. Simple to make, healthy (well Ok it has a little bacon in it but thats ok in my book) and tasty.
Ingredients:
- one can of red kidney beans
- one cup vegetable stock
- 2 rashers of bacon
- 1/2 red onion chopped
- 1/4 green pepper chopped
- 2 small tomatoes chopped
- salt and pepper to taste
- 3 cloves of garlic chopped
Method:
- chop and cook the bacon
- add the green pepper, onion and garlic and saute for 5-10 minutes add tomato and stock
- then add the beans and simmer for 20 minutes
- serve with rice and enjoy
Things are fine here, can't believe little Roshan will be a month old on tuesday really enjoying him and slowly adjusting to having two kiddies, although is a struggle to get Jasmine to preschool on time he he

ReplyDeleteMy son was born when my daughter was in kindergarten and I do remember those hectic mornings trying to get everyone set and make it to school in time. It will get better:) Everyone looks great!
So awesome you made this recipe and even better than your little one will be a month already! Seems like yesterday you were talking long walks, having coffee and spicy food wanting the baby to come out and say hello! Next thing you know? He'll be 21! :P

It's such a coincidence that you should post this recipe. We just returned from a wedding in Texas and the groom's family is from the Dominican Republic. Beans and rice were on served at the wedding. I really enjoyed them.
