Vegetable Pulav
Here's a super easy version of vegetable pulav, all you need is some spices, frozen vegetables and rice combine with a boiled egg and you have a quick tasty meal on the table in a jiffy.
Ingredients
- a few curry leaves but can omit
- 1/4 teaspoon coriander powder
- 1/4 teaspoon cumin powder
- 1/4 teaspoon turmeric powder
- about 3 cloves
- one stick of cinnamon
- one cup of basmati rice
- 1/2-1 cup mixed frozen vegetables
- 2 star anise
- a pinch of cumin seeds
- a few coriander seeds
- 1/4 teaspoon masala powder
- one dried red chili or more if you want it to be spicier
- 1/2 a teaspoon ginger/garlic paste
- 1/2 red onion thinly chopped
Method:
- heat a little canola oil in a pan
- add the spices, curry leaves, chili, ginger garlic paste and red onion saute for 5 minutes
- then add vegetables cook a little, 3 minutes
- add rice and 3 cups of water cover and let it simmer on a low heat for about 20 minutes until all the water has evaporated
