Lotus Root Stir fry with Noodles
So here's another recipe for lotus root, I used it in a simple stir fry and mixed with Chinese egg noodles, and vegetables we love meals like this in our home.
Ingredients:
- 1/2 a pack of lotus root
- 1/2 cup of shrimp
- 1/2 a bunch of broccoli chopped
- one teaspoon of ginger/garlic paste
- 2 tablespoon soy sauce
- a dash of sesame oil
- 2 tablespoon oyster sauce
- 1/4 cup of fresh Thai basil - if you can get it :-)
- one cup of chopped baby bok choy
- one packet of Chinese egg noodles
- heat a little canola oil and add sesame oil
- then add the ginger/garlic paste
- and the bok choy, broccoli and basil cook for 7-10 minutes
- add the shrimp cook for 3-5 minutes until cooked add sauces
- meanwhile boil the noodles then combine
- serve :-)

DeleteI love lotus root, so I was really happy seeing it on your blog Rebecca! Stir fried noodle is always the best way to include veggies, carb, and protein.
