5 Spice Chicken with Jade Rice
Fairly recently two of my favorite bloggers each posted one of these recipes, Birin from Roti and Rice made a wonderful 5 spice whole roasted chicken and Ann from Anncoo Hobby made a Jade fried rice. This inspired me to combine the two and what a great pairing it was.
Ingredients:
Ingredients:
marinade for chicken
- 1/2 teaspoon 5 spice powder
- 1/2 teaspoon ginger/garlic paste
- one tablespoon rice wine vinegar
- 2 tablespoon soy sauce
- dash of sesame oil
for the rice:
- one cup of cooked rice
- one cup of spinach
- 2 cloves of chopped garlic
- 2 eggs whisked a little with a pinch of salt and pepper
- dash of soy sauce
- 1/4 an onion chopped
Method:
- combine the ingredients for the chicken marinade and marinate the chicken in it for a couple of hours, I cooked a couple of chicken quarters
- roast in oven with a lid at 350 for 20 minutes and then another 15- 20 minutes with the lid of
- for the Jade fried rice, I sauteed the garlic with the spinach until it cooked down then blended it
- I then stir fried the onion in a wok on high added the rice, spinach and egg and stirred like crazy to cook the egg :-)

DeleteI hope my 5 spice powder is still good. We use it only sporadically and still have half a jar after several years. Maybe I should just use more to compensate for staleness. Ah me, so much food, so much time.

Looks delicious Reb. I love using 5 spice in my cooking. I love the flavor it brings and the aroma too. I could almost smell your dinner over here hihih. Funny thing is I always commit the same mistake of calling the spice 5 star spice.. haha...
