Bok Choi Fried Rice
One of my go to meals when in a hurry is fried rice in no time at all a simple one pot meal can be whipped up with protein, vegetables and carbohydrate. A nice trick I learnt from my sister in law is to add chopped bok choi to fried rice. I would say baby is a little milder than the bigger variety that can be a tad bitter at times. So here's the recipe :-)
Ingredients:
- a pinch of dried shrimp
- 1/4 teaspoon of Chinese 5 spice
- 1/2 a red onion chopped
- 2 cloves of garlic chopped
- one bunch of regular bok choi chopped finely
- 5 mushrooms sliced
- a handful of frozen shrimp defrosted
- a handful of frozen peas
- 2 eggs
- one tablespoon of oyster sauce
- one tablespoon of soy sauce
- one cup of rice cooked
Method:
- heat a little canola oil and saute the onions and garlic for 3 minutes
- add the 5 spice with the bok choi, mushrooms and shrimp and saute for another 5-10 minutes until the bok choi is reduced down,
- then scramble the eggs into the mixture you may need a little more oil and water to stop it sticking
- add the frozen peas, the oyster sauce and soy sauce stir fry a couple of minutes
- add the cooked rice
- and serve

Hi Rebecca, thanks for this post: reminds me to look in my pantry and maybe cook some rice. I am not a big rice eater, so I need to be reminded to make rice meal. My son loves fried rice a lot, I am making it for him tomorrow! :)
