Roasted Tomato Sauce with Penne
This is a wonderfully easy pasta dish that reminded me of one we had in Italy, a simple pasta with a tomato sauce was often what we ordered for the kids. I adore the simplicity of Italian food and miss it since being back. But we can cook good food at home and smile with the amazing memories.
Ingredients:
- 3 cloves of garlic
- 1/4 red onion chopped
- 8 cherry tomatoes
- 3 large tomatoes chopped
- 1/2 tablespoon of olive oil
- a dash of salt
Method:
- add the garlic, tomato and onion to a cookie sheet and roast for 15-20 minutes
- remove from oven let it cool and peel the tomato skins, they will come of easily after roasting
- blend the tomatoes, onion and garlic
- boil the penne til al dente and mix with sauce
- serve with a simple green salad

Fabulous and simple, have never tried roasting the tomatoes and blending to make a sauce. Must kick the habit of jars. Sounds lovely and easy for a week day meal. Yum!
