Carrot and Corn Fritters
Here is another fritter recipe, its a little late in the season as the corn is finishing as we head into fall, but frozen would work just as well. Its a simple and healthy recipe and I loved the sweetest of the corn in these.
Ingredients:
- one cup of cooked corn I boiled fresh to use
- one large carrot grated
- one egg
- about 1/4 cup of flour or just a enough combined with the egg to hold it together
- salt and pepper to taste
Method:
- combine the egg, flour, corn and carrot and form patties
- heat a little olive oil and lightly pan fry on each side for about 3-4 minutes
- enjoy
and had to share these pictures of the kids getting their hair cuts, look at the wee man in the mirror
first hair cut, It was a challenge to keep him still :-)
Hope your all having a great week, I make my TV debut on a local station tomorrow going to cook salmon and vegetable en papilotte - nervous
