Red Bean and Vegetable Pilaf
This was a fun wee creation a fusion of rice and beans with vegetables added, its great with a sliced boiled egg and would make a great packed lunch.
- one cup of basmati rice
- 1/4 red onion chopped
- one can of red kidney beans
- one rasher of bacon
- 2 cloves of garlic chopped
- a handful of spinach
- one carrot chopped
- one cup of vegetable stock
- 1/2 teaspoon of cumin
- 1/2 teaspoon of coriander
- 1/2 a tomato chopped
Method:
- cook with bacon till crispy and remove, cut into pieces and keep to one side
- heat a little olive oil and saute the onion and garlic for 5 minutes
- add the spices, tomato and let it reduce down to a paste about 5 minutes, add the carrot, beans and spinach saute for 3 minutes, add bacon back in
- then add the rice and one cup of stock, turn to a simmer for 30 minutes
- add water as needed in small amounts so it doesn't stick taste rice to see if its cooked
- enjoy

DeleteYummy pilaf and includes lots of things I keep stocked in my kitchen. We haven't started decorating yet, but we did make a gingerbread house that got half-way done until we ran out of frosting due to my tasters :-)
