Market Brunch
On a recent trip to the North Carolina mountains we ate at The Fork and Spoon a fab restaurant in Spruce pine. I ate the first evening with my friends and the second day I took hubby and the kids there for brunch, hubby still mentions how good the food was. I had an open sandwich with pulled pork seasonal vegetables and an egg. Fun modern Southern this was a brunch I made inspired by that. I used lovely bacon from the farmers market but it would be just as good without it.
Ingredients:
for 2
- 4 slices of bacon
- 2 handfuls of fresh sugar snap peas
- a bunch of Swiss chard
- a slice of toast
- 2 eggs
- a little butter
- 2 cloves of garlic
- cook the bacon in a frying pan and keep ready
- sauté the garlic in a little butter add the Swiss chard and let it reduce down with a lid then add sugar snap peas for 2 minutes so they remain crisp.
- toast some bread add the bacon then the veggies and top with an egg I love mine with runny yolk
