Pav Bhaji
We are blessed to have some lovely Indian friends here they really enjoy introducing us to North Indian street food. One of these dishes was Pav Bhaji its a simple Vegetable curry that is eaten with a warm buttered bread roll. Its great to make a big pot of this and have as a fun alternative to sandwiches for lunch.
This dish also reminds me of my sweet sister in law as its a favorite of hers love the power food has to connect us all.

Ingredients:
- one cauliflower chopped
- 3 cloves of garlic
- a little freshly minced ginger
- 1/2 a red onion chopped
- 2 medium tomatoes chopped
- 1/2 cup of frozen peas
- 3 small potatoes chopped
- 3 carrots chopped
- one tablespoon of tomato puree
- one teaspoon of pav bhaji curry mix from the Indian store, or a basic masala powder
- salt to taste
- bread rolls to serve it with, its good with or without butter
- a pinch of mustard seeds
Method:
- Add the vegetables to a pan with about 2 -3 cups of water enough to cover the vegetables and bring to a boil, allow to boil for 10-15 minutes until the vegetables are soft and mash
- meanwhile heat a little oil pop the mustard seeds, add the fresh ginger and garlic and saute with the onion for 5-7 minutes
- then add the tomatoes and slowly cook down into a paste for about 10 minutes add the curry powder and mix with the vegetables, simmer for about 10 minutes
- you may beed to add a little more water to get a sauce and blend in the tomato puree and salt as desired
- enjoy with toasted bread :)
