Lentil and Vegetable soup
This simple soup was inspired by my pal Emma Carder a wonderful dietitian based in the UK, this vine using a pressure cooker motivated me to make this soup. We often make dal - lentils in the pressure cooker so the light bulb went on, why not do this for soups.
Ingredients:
- 4 small carrots chopped
- 3 cloves of garlic chopped
- 1/2 a red onion chopped
- 2 stalks of celery chopped
- one cup of French green lentils
- 1/4 teaspoon of garam masala
- salt and pepper to taste
Method:
- saute the onion and garlic in a little oil for about 5 minutes then add the vegetables and lentils, garam masala and 4 cups of water, close the pressure cooker lid and let it have two whistles
- boil a little longer depending on how cooked you want the lentils, I like them with a little bite to them
- add a little chopped parsley to season and to serve
- enjoy a lovely nourishing soup
