Spicy Shrimp and Spaghetti
Here's a simple and flavorful recipe for those busy week nights. This could also be good without shrimp or with added vegetables.
Ingredients:
- 1/2 a packet of wild caught NC frozen shrimp or a bowl of your local shrimp.
- one can of tomatoes
- 1/4 teaspoon red chili flakes
- a handful of fresh basil chopped
- 2 cloves of garlic chopped
- 1/2 a red onion chopped
- salt and pepper to taste
- a dash of white balsamic vinegar
- spaghetti
- pea shoots to garnish
Method:
- sauté garlic and onion in olive oil for about 5 minutes add the balsamic vinegar and red chili flakes for another few minutes.
- then add the can of chopped tomatoes, salt and pepper and fresh basil stir for 3-4 minutes.
- remove from heat and blend to make a sauce, return to the pan and add the raw shrimp, cover and cook the shrimp for 5 minutes or until cooked.
- serve over spaghetti with a side salad.
