Cajun Spiced Bean Soup
This is a nourishing and satisfying soup. It uses a package of soup beans that most grocery stores sell this particular one came with a cajun spice pack, that added a lovely kick to it.
Ingredients:
- 1/2 a pack of dried beans and 1/2 a pack or one teaspoon of cajun spice mix.
- 1 cup of chopped kale
- 1/2 a red onion chopped
- 3 cloves of garlic chopped
- 2 small carrots chopped
- 2 sweet potatoes diced
- one carton of vegetable stock.
- 2 stalks of celery diced.
Method:
- sauté onions, celery and garlic in olive oil for 5-7 minutes
- add the kale little by little to reduce down then add the beans and a liter/ carton of vegetable stock.
- boil for 45 min - 60 minutes this takes a while but I am sure they could be pressure cooked to speed this up.
- After about 40 min add the sweet potato and carrot, and spices, allow to boil until the beans and vegetables are soft.
- enjoy.
We are slowly moving into spring here in North Carolina with a few bright and lovely days but quite a few cold and cloudy ones, so I thought a picture of Florida would be nice and knowing that warmer days are up ahead.
