Tomato and Pepper Soup
This is a simple and tasty soup using canned tomatoes, the addition of fresh basil makes a lovely summery flavor.
I used canned cherry tomatoes this time and topped with rosemary crackers.
Ingredients:
- 2 cans of cherry tomatoes
- 5 small sweet peppers chopped
- 3 cloves of garlic chopped
- 1/2 a red onion chopped
- a dash of white balsamic vinegar
- salt and pepper to taste
- a small pack of fresh basil chopped or a handful if fresh
- 1/4 teaspoon red pepper flakes
Method:
- sauté onions and garlic in olive oil with the red pepper flakes and vinegar and sweet pepper
- then after a few minutes add the cans of tomatoes, with salt and pepper to taste and turn own to a simmer for 15 min, add the basil
- then blend
- enjoy
