Broccoli Soup
This simple soup was surprisingly easy and tasty, I didn't have stock on hand but it still had lots of flavor.
Ingredients:
- two crowns of broccoli chopped
- 2 cloves of garlic chopped
- one celery stalk chopped
- 1/2 a red onion chopped
- one teaspoon mixed French or Italian herbs and 1/4 teaspoon chipotle pepper.
- salt and pepper to taste
- a handful of chopped fresh cilantro.
- a knob of butter
Method:
- sauté onions, garlic and celery in a little olive oil then add a little butter
- add the herbs and chipotle pepper
- add the cilantro and broccoli and water about 4 cups just enough to cover the broccoli
- turn down to a simmer for 20-25 min until soft, add salt and pepper to taste and blend.
