Broccoli Soup


This simple soup was surprisingly easy and tasty, I didn't have stock on hand but it still had lots of flavor. 



Ingredients:

  • two crowns of broccoli chopped
  • 2 cloves of garlic chopped
  • one celery stalk chopped
  • 1/2 a red onion chopped
  • one teaspoon mixed French or Italian herbs and 1/4 teaspoon chipotle pepper.
  • salt and pepper to taste
  • a handful of chopped fresh cilantro.
  • a knob of butter
Method:

  1. sauté onions, garlic and celery in a little olive oil then add a little butter 
  2. add the herbs and chipotle pepper
  3. add the cilantro and broccoli and water about 4 cups just enough to cover the broccoli
  4. turn down to a simmer for 20-25 min until soft, add salt and pepper to taste and blend. 
  5. enjoy
