Strawberry Cake
Its strawberry season in North Carolina and we are blessed to have a farm about 5 minutes down the road from us, this was a fun cake to make and the butter icing is so pretty with the natural pink. It is also fun decorating with edible flowers.
Ingredients:
- 3 eggs
- 6 oz of self raising flour
- 6 oz of butter
- 6 oz of sugar
- about 2 cups of chopped strawberries
- 1/4 of a packet of icing sugar and 4 oz butter to make butter cream icing.
- a handful of edible flowers we used roses, viola, dianthus and snap dragon.
Method:
- cream the butter and sugar until light and fluffy
- add the eggs and flour and blend
- then add about a handful of strawberries not too many as it will make the batter too moist
- bake at 350 degrees for about 20 minutes until a knife comes out clean.
- Meanwhile blend, the icing sugar, butter and strawberries do a little at a time to get the right consistency for the butter cream icing,
- once the cake is cool spread the icing and decorate.
