Strawberry Cake



Its strawberry season in North Carolina and we are blessed to have a farm about 5 minutes down the road from us, this was a fun cake to make and the butter icing is so pretty with the natural pink. It is also fun decorating with edible flowers. 





Ingredients:


  • 3 eggs
  • 6 oz of self raising flour
  • 6 oz of butter
  • 6 oz of sugar 
  • about 2 cups of chopped strawberries 
  • 1/4 of a packet of icing sugar and 4 oz butter to make butter cream icing. 
  • a handful of edible flowers we used roses, viola, dianthus and snap dragon. 
Method:

  1. cream the butter and sugar until light and fluffy 
  2. add the eggs and flour and blend
  3. then add about a handful of strawberries not too many as it will make the batter too moist 
  4. bake at 350 degrees for about 20 minutes until a knife comes out clean.
  5. Meanwhile blend, the icing sugar, butter and strawberries do a little at a time to get the right consistency for the butter cream icing,
  6. once the cake is cool spread the icing and decorate.
