Zucchini Soup
I had lots of zucchini and remembered making a zucchini soup a few years ago, so thought it would be fun to make and added some mushrooms. This is simple to make and flavorful.
Ingredients:
- one small box of mushrooms chopped
- 1/2 an onion chopped
- 4 cloves of garlic chopped
- 1-2 zucchini chopped
- 2 cups of vegetable broth
- salt and pepper to taste
- 1 tablespoon of butter
- one cup of water if needed
- 1/2 teaspoon Italian herbs
Method:
- sauté the onion, garlic in the butter
- add the mushrooms and zucchini and herbs, continue to sauté for about 7- 10 minutes until zucchini is soft
- then add the stock and boil for 10 minutes then blend
- return to pan and add desired amount of water depending on the thickness of the soup you like.
- season with salt and pepper, add edible flowers or croutons as garnish.
