Chicken, Chickpea and Spinach Curry
Sorry not the best picture, I made this curry the other day but it really is good.
Ingredients:
- one pack of chicken
- one small red onion diced
- 1/2 teaspoon of ginger and garlic paste.
- 2 big handfuls of spinach
- one can of chickpeas
- one tomato diced
- 1/2 a can of coconut milk and water to get desired consistency (you can use the whole can but we find it too rich in flavor)
- 1 teaspoon of masala / curry powder
- salt to taste
- 1/4 teaspoon of cumin and coriander powder
Method:
- Sauté 1/2 of the onion, ginger/garlic paste and chicken, until 80 percent cooked, with a little curry powder, keep to one side.
- then sauté the rest of the onion, slowly add the spinach and let it reduce down with the tomato, cumin and coriander powder and more curry power add a 1/2 a can of coconut milk and water and the chickpeas until a sauce of desired consistency is obtained, add back the chicken,
- simmer for 15- 20 minutes
- enjoy with rice and vegetables.
Curry is always good. This looks just like what a curry should look like...yummy!
