Thai inspired meatballs
This is the second time making this tasty dish and using ground chicken is new to be, but its lovely mild and tasty with the fresh herbs and ginger and garlic.
INGREDIENTS
- 2 teaspoon ginger garlic paste
- 1 pound ground chicken
- 1/2 a bunch of cilantro thinly sliced
- 2 teaspoons fish sauce
- salt to taste
- 1/2 teaspoon sugar
- 2 cups chicken broth
- 1 (14-ounce) can full-fat coconut milk
- 3 handfuls of baby spinach
- squeeze of lime juice
- 1 tablespoon of red curry paste.
- one stick of celery chopped
- one small carrot chopped
Method:
- mix the celery, carrot cilantro, ginger/ garlic paste, sugar, fish sauce and meat and form meatballs
- cook the meatballs in canola or vegetable oil
- after 10 minutes remove them from the pan
- sauté onions in oil then slowly add the spinach to reduce down
- empty the coconut milk into a bowl and stir in one tablespoon of red curry paste
- add meatballs back to the pan with the coconut milk and a little water
- simmer for 10 minutes and serve with rice
