Couscous, chickpea and butternut squash salad
Recently I have been making more grain salads as a alternative to sandwiches for lunch, they are fun and many possibilities are possible, I made a little graphic below to give some ideas, and there are quite a few recipes on the blog.
Couscous, chickpea and butternut squash salad -
Ingredients
- one can of chickpeas
- a handful of parsley chopped
- 1/2 teaspoon of Italian herbs
- one small butternut squash cubed
- a dash of olive oil
- salt to taste
Method
1. Roast the butternut squash drizzled with salt, herbs and olive oil at 400 for 20-30 min until soft.
2. Cook the couscous
3. Mix the couscous with the parsley, chickpeas and butternut squash.
This is a fun side dish or as a lunch it has wonderful antioxidants and flavor, protein and grains perfectly balanced and delicious.
