Ancient grain and tomato salad
This is a nice whole grain salad, perfect for warm days and for packed lunches.
Ingredients
- one cup of ancient grains - mix of quinoa, millet, buckwheat
- Zataar
- dash of olive oil
- salt to taste
- 1/2 cup corn
- a bunch of chopped parsley
- 4-5 small tomatoes chopped
- 1/2 cucumber chopped
- a few roasted peppers chopped
Method
1. Cook the grains, boil with a lid for 15 min with the frozen corn added and 2 cups of water
2. Mix grains with other ingredients
While I don't have a mix of grains, I do have a bag of quinoa that I can use for this salad.
