Fish cakes




The other day I had some leftover mashed potato in the fridge and rather than having sandwiches for lunch again I decided to make fish cakes, easy and tasty. 

Tuna and potato cakes 

Simply combine a can of tuna with an egg and a cup of mashed potato, paprika, salt and pepper, chives and coat with bread crumbs, pan fry until golden. 



Its fun to find ways to make leftovers more interesting, who likes fish cakes?
