Minestone Soup
Minestrone soup
Ingredients -
- 5 carrots chopped
- 1/2 onion chopped
- 3 cloves of garlic chopped
- 2 celery sticks chopped
- A handful of chopped spinach and a handful of chopped kale
- A can of cannelloni beans
- A liter of vegetable stock
- A can of tomatoes
- 1 teaspoon Italian herbs, chipotle pepper and salt to taste
- 2 tablespoons of barley
- 1/2 cup macaroni
- 1 cup water
Method
1. Sauté onion, celery, garlic, and carrot in olive oil for 5-10 min add kale and spinach
2. Then add stock, can of beans and tomatoes simmer for 15 -20 min
3. Add pasta and barley maybe a little more water and simmer 10 min
In other news we just returned from a trip to the UK to see family we nearly cancelled many times as we were worried about covid, it was a tad stressful with the testing and always trying to be safe for ourselves and others, but so happy we went. Here is a little clip of our trip below.
