Chocolate Chip Shortbread
These simple shortbread cookies are easy to make and lovely. I made them on the first day of our daughter's High School. Can you believe she is now in High School I started this blog when she was a baby! Our son is also doing well and is now in 5th grade the big kid in school.
Chocolate chip shortbread
Ingredients:
* 7oz unsalted butter, at room temperature, cut into small cubes
* 3½oz sugar, plus extra for sprinkling
* 10½oz plain flour, sifted, plus extra for dusting
Method
1. Preheat the oven to 350 F
2. Mix together the butter and sugar, either by hand or using a mixer, mix in the flour until completely incorporated. Using your hands, squeeze the mixture together into a ball of dough.
3. Add a handful of choc chips
4. Gently roll the dough and cut it into shapes using a biscuit cutter.
5. Transfer the shortbread onto the baking tray and chill in the fridge for 30 min.
6. Sprinkle each biscuit with a pinch of sugar. Bake for 15–20 minutes, or until pale golden brown.
Enjoy with a cup of tea.
