Salmon and Vegetable Soup
I made this simple and nourishing soup recently it was the perfect light meal before I attended a local business networking meeting where I spoke on self-care and Nutrition.
Salmon and vegetable soup
This simple soup is based on Scottish Cullen skink
Ingredients:
- 5 medium potatoes diced
- 3 cut carrots
- one container of vegetable stock
- a couple of tablespoons of parsley
- a big piece of salmon and 1/2 a pack of smoked salmon
- about 2 cups of milk
- salt to taste
- two teaspoons of butter
- one small red onion chopped
- 3 cloves of garlic chopped
- one spring onion of leek chopped
Method :
1. Sauté onion and garlic in butter for about 5-10 min then at carrots and potatoes and stock and simmer for 10-15 min until potato is cooked
2. Meanwhile poach the salmon in milk in another pan on low heat with parsley and add in smoked salmon
3. Then add this to the soup and veggie simmer for 5 min
