Mumbai Sandwich




On a recent trip to India, I enjoyed a wonderful Mumbai/Bombay sandwich at a friend's house. It was tasty and a fun change from your regular sandwich.


Ingredients:

  • 2 slices of bread
  • a generous spread of Bombay sandwich spread made from mint and coriander with a little kick it can be found in Indian grocery stores or online 
  • one sliced tomato
  • sliced cooked potato, about 1/2 per sandwich 
  • cucumber slices
  • a few pieces of red onion
  • a slice of cheese - I used Swiss 
  • about a teaspoon of chaat masala 
Method:
  1. slice and cook the potatoes and keep to one side
  2. then spread the Bombay spread on each slice of the bread, layer the tomato, cucumber, onion, potato, and cheese, and sprinkle chaat masala on it add the cheese and put on a panini press for about 3 minutes until done
  3. enjoy warm
