ORZO, SMOKED SALMON AND VEGGIES


This is a lovely simple and quick meal that also makes a great packed lunch, 


Ingredients:
- one pack of smoked salmon
- 1/2 a red onion 
- 3 cloves of garlic 
- one cup of orzo 
- one squash and one zucchini 
- 2 diced tomatoes 
- 1 diced carrot 
- a few handfuls of chopped spinach 
- 1/2 teaspoon Italian herbs and salt to taste 

Method:

1. Cook orzo for about 12 min til al dente 
2. Sauté onions and garlic 3-4 min in olive oil 
3. Add squash and sauté on medium heat for 5 min 
4. Add carrot and spinach then tomato with herbs and salt and let it reduce to 10 min near the end add salmon 

This is a nutrient-rich meal with omega-3 from salmon, vitamins, and minerals from vegetables
