Laksa




I love trying new recipes and new ingredients. The other day, I was in a local Asian store, browsing the aisles and reading all the instructions on the jars, wondering what I could try and make. I settled on Laksa.

I also got some fish balls, which looked like boba and were fun, some bok choi, and enoki mushrooms. 

I found a recipe online, Basically, I heated 1/2 of the jar of Laksa paste in a pan, then added a can of coconut milk and 4 cups of water, then added the fish balls, bok choi, and enoki and cooked for 15-20 min. It was super easy. I then cooked udon noodles, added them to a bowl, poured the soup over them, and topped them with cilantro. I enjoyed this; my daughter did too, but the fish balls were not popular with anyone.

I wanted to share this as this is what cooking is all about: experimenting, having fun, and trying World cuisine. Sometimes it won't go well, but that's ok; it's part of the fun. Even if something isn't loved by your family, you tried, and the next recipe may be adored, never give up.
